My kindred spirit Anna Dvorak has been instrumental in helping me to incorporate many more nutritious foods into my diet on a regular basis, substituting them in delicious ways for “low-value” foods like chips and cupcakes.
Lately she’s been helping me to accommodate the specific needs of my body type by incorporating good protein, lots of veggies, high B-vitamins, minerals and non-gluten fiber, and good fats from butter, coconut oil, olive oil, nuts and seeds. And healthy snacks to keep my blood sugar levels even. (I have a tendency toward hypoglycemia; my mood dive-bombs and my ability to concentrate flies out the window the second my blood sugar starts to get low. It’s not pretty, folks.)
Below is one of the healthy snacks Anna recommended for me. Not at all the kind of thing I would have come up with on my own, but trust me– it’s a totally satisfying, healthy and tasty treat.
It’s easy to keep the ingredients on hand and something that kids would also enjoy when having a craving for something sweet. Once you get past the reservations you might have about brown rice as the basis for a sweet treat, I think you’ll love it. As a mid-morning snack, it easily satisfies me until it’s time for lunch.
